Grilled White Fish with Capers and Cherry Tomatoes
A nice light lunch. A simple yet elegant main that I have served for lunch on many superyachts.
Preparation: 5 minutes · Cooking: 8 minutes

Method
Allow the fish to come to room temperature. Take it out of the fridge at least 20 minutes before cooking.
Preheat the grill to 220°C.
Dice the cherry tomatoes. Add to a bowl with the capers, caper brine, and a drizzle of olive oil. Stir to combine.
Place the fillets on a metal baking tray. Spoon the tomato and caper mixture evenly over the fillets. Place under the grill and cook for 8 minutes.
Garnish with a scattering of Basil or Dill leaves.
Tips from my kitchen
Taking fish out of the fridge about 20 minutes before cooking takes the chill off and helps it cook more evenly.
